Tasting notes
A gaiwan is the plainest way to brew Chinese tea: leaf in, water on, lid tilted to strain as you pour. Three pieces, nothing to break, nothing to season.
Use roughly one gram of leaf per 50ml of water. Give the first pour five seconds and tip it away to wake the leaf, then add twenty or thirty seconds to each infusion after that.
Rinse in hot water only. Detergent leaves a film that dulls the glaze and, eventually, the taste.
