Tasting notes
Shou Mei Wild White is grown in Zhenghe, Fujian, from Zhenghe Da Bai bushes and withered and sun-dried. This is a 2019 lot, aged since it was made.
In the cup it reads stone-fruit and honey, with a light roast and low caffeine. Brew 4g in 150ml of 85°C water for 2–3 minutes, and the leaf will give three good infusions.
We buy this lot direct from the people who make it and name the village it comes from. Nothing is blended across farms, and nothing is held in a warehouse overseas — the tea is packed at origin and shipped in small batches.
Brewing guide
White tea is delicate and forgiving. A slightly longer first steep opens the downy leaf; later infusions can go to a minute. A glass or porcelain vessel shows the bud dancing.
